Hey everyone! I was in the mood for a pasta dish last night and since it was 95 degrees, nobody wants to eat heavy red or cream sauce! I had a ton of vegetables in the fridge so I thought it would be a good idea to chop them all up and roast them in the oven, for optimal flavor, and throw them in with some spaghetti. I had red bell peppers, red onions, carrots, broccoli, and zucchini on hand. I tossed them in oil, salt, pepper and Herbs de Provence (Herbs de Provence is a flavor profile from the South of France which includes these dried spices: Thyme, Rosemary, Savory, Oregano, Marjoram and Lavender).
